Vegan Cookies - Collab with @turmeric.oats

Recipe:

6 Tbs vegan butter, soft but not melted(you could use coconut oil but it may change the flavour slightly)
1/2 cup sugar
4 tsp brown sugar
1 flax egg (1 Tbs ground flaxseed, 2 Tbs boiling water)
1 tsp vanilla
1&1/4 cups all purpose flour
1/2 tsp baking soda
1 tsp salt
Desired amount of vegan chocolate/ chocolate chips (I used about 1/2 a cup of chopped dark chocolate)




Instructions:

Preheat oven to 160 degrees Celsius.
In a bowl, beat together vegan butter, the two types of sugar and the vanilla till creamed.
Add the flax egg and salt and beat well. 
Next add the flour and baking soda and mix until a soft dough forms. 
Stir through your chocolate chunks. 
Cover the dough and refrigerate for about 15-30 minutes (this is not necessary but helps make the cookies chewier)
Scoop about 1 Tbs of the dough and roll it into a ball, place it on a lined cookie sheet and flatten well with your hands (they spread a bit not a huge amount)
Repeat until all of the dough is used up. 
Bake for 10-12 minutes, depending on how crispy you want them.
Cool on a wire rack for about 30 minutes and then enjoy :)
